What is freshly milled flour and why is it so good for you?
In the late 1800s, less and less people lived near a grain mill or didn’t have one at home. They needed to get flour in a store setting. But freshly milled flour goes rancid quickly if not used right away or stored properly in a fridge or freezer. In order to sell flour in a store, they had to sift out the bran and germ. Leaving a dead flour to sell to consumers. This worked out well for them because they could make double the profit by selling the bran and germ separately to farmers as feed for animals.
After a couple decades of people eating this type of flour, the population got sicker because of lack of vitamins in their flour. Instead of adding back the bran and germ or encouraging people to mill their own flour, they added synthetic vitamins. This is what we see today with “enriched flour.”
When we bake our freshly milled goods, we measure the exact amount of wheat berries needed, mill it into flour, make the product and bake it. There is no time to go rancid. The best kind is sourdough with freshly milled flour, it is fermented and comes with all the vitamins and minerals in freshly milled flour.
